I’ve had a cold now for 2 weeks and I’m trying to cure myself by eating super-foods. I found a raw food recipe for kale pesto here and though it looked very interesting. It was very tasty although I did it a bit differently and poured it over soba noodles which made it very non raw I also added chick peas, cherry tomatoes and served it with miso soup on the side.
1 clove garlic
0,5 dl olive oil
0,5 dl walnuts
1 bunch kale, de-stemmed and torn into small pieces
Some lemon juice
Sea salt and black pepper
Blend garlic and walnuts in a food processor. Add avocado, kale, lemon juice and seasoning. Add olive oil gradually (not sure how much it was in the end but about 0,5 dl).
